A condo BBQ can become strangely complicated for something that is supposed to involve sitting around and eating grilled food.

Someone forgets ice. Someone brings six bottles of wine but no water. There are twenty cans in the cooler and all of them are the same flavour. The person holding the tongs somehow becomes responsible for opening bottles, finding cups and answering “what drinks do we have?” every ten minutes.

The fix is not a longer shopping list. It is a simpler one.

For most mixed groups in Singapore, we like to think in three lanes: something cold and easy, something celebratory, and one stronger bottle for later. Add water, mixers and more ice than you think you need. That is basically the whole system.

Lane 1: the cold, easy drink.

This should make up most of what you buy. At an outdoor BBQ here, people are warm before they even reach the pit. The first drink has one job: be properly cold and easy to enjoy.

A Helles-style lager is ideal if you have a mixed group. Paulaner Münchner Hell is crisp, balanced and familiar enough that it does not divide the table. It works with grilled chicken, sausages, burgers, seafood, chips and all the random side dishes people bring “just in case”.

If your crowd likes wheat beer, Paulaner Weissbier or Erdinger Weissbier gives you a slightly fuller option. Wheat beer has more body and aroma, so it is particularly good once the grilled food starts landing on plates.

You do not need five different beer styles. One main beer and one alternative is plenty. The important part is temperature: get the cans or bottles into ice early, not after everyone arrives.

Lane 2: one bottle for the moment everyone is finally there.

This is less about quantity and more about timing. Maybe it is someone’s birthday. Maybe a friend just collected keys to a new place. Maybe the group has not managed to gather in months and you want one small “okay, cheers everybody” moment before the evening disappears into food and conversation.

Domaine Chandon Brut is a useful Beeva pick here. Sparkling wine lets you pour a small glass for several people without making the whole BBQ a wine event. If you want something more recognisable for a bigger celebration, Moët & Chandon Brut Impérial is the obvious step up.

Keep the bottle in the coldest part of the cooler and forget about it until the right time. It is much nicer to open it because the moment feels right than because you are worried it has been sitting there too long.

Lane 3: one proper spirit, not six.

Once dinner is winding down, some groups want one more drink. This is where people often overbuy: gin, vodka, whisky, rum, tequila, mixers for all of them, then half the bottles go home unopened.

Unless you already know everyone has specific preferences, choose one versatile spirit. Absolut Blue is easy because it can go with soda, tonic, citrus or juice. If your group is more whisky-oriented, bring one whisky instead and leave the rest of the shelf at home.

The goal is not to recreate a hotel bar beside the swimming pool. It is to give people one good option after the beer.

How much ice? More than you think.

The first bag disappears into the cooler. The second bag actually goes into drinks. The third bag is the bag everybody wishes they bought.

In Singapore weather, ice is not decoration. It is part of serving the drinks. If you are organising for eight to twelve people, it is usually worth separating your “chilling ice” from the cleaner ice you plan to put directly into glasses.

And while we are on the unglamorous details: bring cold water. Bring soda water. Have a couple of non-alcoholic choices. Those are the drinks that keep a long evening comfortable, especially when people are eating salty food outside.

A BBQ drinks setup should almost disappear into the background.

Nobody should need a menu. Nobody should be waiting for you to measure something while the satay burns. Open cooler, pick something cold, go back to the food.

That is why this three-lane formula works: beer for the heat, bubbles for the moment, one spirit for later. Everything else is optional.

The best BBQs are never remembered because the drinks selection was complicated. They are remembered because the drinks were cold, the food kept coming, and nobody had to think too hard about either.
